During the montanera (acorn season), these pigs enjoy a diet based primarily on acorns from trees of the Quercus genus (holm oaks, oaks, and cork oaks), obtained while grazing in semi-freedom, a process that contributes to the quality and distinction that characterize this authentic delicacy.
